This photo shows a comparison of non-fermented turmeric powder and fermented turmeric powder in water. As you can see, the fermented turmeric is much more soluble than the non-fermented turmeric indicating greater bio-availability. The lighter colour of the fermented turmeric is due to the greatly increased levels of tetrahydro-curcumin.
The tetrahydro-curcumin form of curcumin is naturally highly bioavailable and is recently getting a lot of attention in research for its powerful range of actions:

Through fermentation, turmeric’s other nutrient levels and their bio-availability are also significantly increased, in particular, other types of curcumins. These graphs show a 400% increase in tetrahydro-demethoxy-curcumin and a 983% increase in tetrahydro-bis-demethoxy-curcumin after fermentation with our Kefir-kombucha culture. Measurements were taken using HPLC analysis.
